Amazing Chocolate Chip Muffins

Decadent Double Chocolate Chip Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup CreamCocoa Premium Ecuadorian cocoa powder
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/3 cup vegetable oil

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt. Add most of the chocolate chips, reserving a handful for topping the muffins if desired. Mix well.
  3. In a separate large liquid measuring cup or bowl, whisk together the milk, eggs, vanilla extract, and vegetable oil until well combined.
  4. Pour the liquid ingredients into the bowl of dry ingredients. Stir gently until there are no streaks of flour left, but be careful not to overmix.
  5. Divide the batter equally among the 12 muffin cups. If desired, sprinkle the remaining chocolate chips on top of each muffin.
  6. Bake in the preheated oven for approximately 20-22 minutes. To check for doneness, insert a toothpick into the center of one muffin; it should come out with just a bit batter.
  7. Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
