Decadent Double Chocolate Chip Muffins
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup CreamCocoa Premium Ecuadorian cocoa powder
- 3/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup milk
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/3 cup vegetable oil
Instructions:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a 12-cup muffin tin with paper liners.
- In a large bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt. Add most of the chocolate chips, reserving a handful for topping the muffins if desired. Mix well.
- In a separate large liquid measuring cup or bowl, whisk together the milk, eggs, vanilla extract, and vegetable oil until well combined.
- Pour the liquid ingredients into the bowl of dry ingredients. Stir gently until there are no streaks of flour left, but be careful not to overmix.
- Divide the batter equally among the 12 muffin cups. If desired, sprinkle the remaining chocolate chips on top of each muffin.
- Bake in the preheated oven for approximately 20-22 minutes. To check for doneness, insert a toothpick into the center of one muffin; it should come out with just a bit batter.
- Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
