Is your cacao powder Dutch-processed?

Yes. It's lightly alkalized with less than 2% potassium carbonate, which smooths out acidity, deepens the color, and dramatically improves how easily it dissolves in liquids — no clumps in your latte or batter.

What's the difference between cacao and cocoa?

The terms are often used interchangeably. We use "cacao" to emphasize that ours is a pure, single-origin, fine-flavor product. It's 100% cacao with 20–22% cocoa butter — nothing added.

Is it safe when it comes to cadmium and heavy metals?

Yes. Our cacao is tested by accredited labs and meets the safety standards required in the U.S., Canada, and the EU. Its cadmium level is 0.39 mg/kg — below the EU limit of 0.60 mg/kg for consumer cacao powder, and low for South American cacao.

Is it vegan, gluten-free, and non-GMO?

Yes to all three. It's 100% pure cacao powder with no fillers, sugar, dairy, or preservatives — naturally suitable for vegan, gluten-free, and non-GMO diets.

How much cocoa butter (fat) does it contain?

20–22%, nearly double the 10–12% found in most grocery-store cocoa. That higher fat content gives a richer flavor and better baking performance.

Where is your cacao sourced?

From a single origin: Ecuador. We use the Nacional (Arriba) variety — a fine-flavor heritage bean that represents less than 10% of the world's cacao supply.

How should I store it?

Keep it in a cool, dry place in a sealed container, away from direct heat and sunlight, to preserve flavor and aroma.
